We at Chilasso believe in a sustainable production process and maintaining and improving the quality of our hot sauce. This means no additives, no E-labels, all biological and pesticide and GMO free ingredients.

All ingredients are carefully selected. Currently we do not have any supply contracts with the vendors. Quality before quantity. Also our business is exanding and overproduction is a waste of time and resources.

With every new restaurant and client we will scale up production accordingly. Below you will find an overview of our main ingredients and of their suppliers. Also we explain briefly the production process and the philosophy behind our sauce, the brand and the pricing. Enjoy and bon apetit!

Production Proces

Manufacturing

The expected production facility contains all infrastructure required for food production. But all cutting, mixing, stirring, cooking, pumping and bottling equipment needed for mass scale producion will be purchased according to demand.
Notice that Chilasso Harisa is a by-product of Chilasso Sauce, which apart from being a valuable product in its own right, is also one of the magic ingredients in Chilasso Hot Ketchup.
Although the product will eventually be mass-produced for the global market, all artisan techniques shall be preserved in the larger process, so that the taste and texture of the sauce retains all the purity, body and silkiness that Chilasso has always been known for, when it was only delivered in Amsterdam.
Packing and Transport

Finished products are packed at the production facility where a certain amount of storage is also available and will be supplemented by additional local storage as necessary. 

There are two aggregated channels at that point: Dutch Urban Horeca and all others. For Dutch Urban Horeca, each region has a wholesaling unit with storage space for immediate wholesale stock. 

For all other sales channels, product from production storage will be picked up by an outsourced logistics company.

Innovation for Quality and Efficiency
The products are proprietary based on secret recipes. In addition we design logos and packaging and protect all intellectual property in its various forms.

During the next few weeks, we will design new logos and packaging for Chilasso Hot Ketchup, in time to launch it before the Summer. These designs will convey as always a message of higher quality than our competitors. 
Superior Materials
We are continually increasing that level, already far above any competitor as well as always seeking out superior materials. 

Often in that process we actually find cheaper prices for packaging materials in spite of increased quality.


We are also designing an integrated suite of in-house software and database to manage inward and outward inventory among other front, middle and back-office processes, such as order capture and administration, short-term operational planning and accounting.

Red chilli peppers

Foundation

Over the centuries, hot pepper plant varieties have been selected to bear very fine, easy-to-dry fruit for use as condiments, while sweeter varieties tend to be meatier for various uses in the kitchen. These hot peppers can be used both for drying and for cooking, adding color and heat to your stews. But we went further and used them as the basis of our hot sauce: Chilasso

These peppers and the way they were grown meet EuroSur standards as well as other EU regulations. This means that the chillies used are:

- free of pesticides
- non-GMO
- grown sustainably
- fair trade
- grown in Spain
- stored HACCP compliant
- transported sustainably

Spices

Enhancement

The mixture of herbs used in Chilasso was found and balanced out through a maticulous process where the creator of Chilasso Mr. Sayed always relied on herbs produced in a sustainable manner. Chilasso BV. adheres to EU regulations and batch coding as well as follwing HACCP protocols for the storage and processing of our product and inventory.

The herbal mixture in Chilasso is mainly mediteranean and has been enriched with some Middle Eastern influences.

Because we want only to use the best and fairly produced ingredients we sought to get the herbs that meet the following requirements:

- free of pesticides
- non-GMO
- grown sustainably
- fair trade
- stored HACCP compliant

Vinegar

Body and spirit

We do not believe in additives and love sustainability. That is why we use natural vinegar. We are therefore continuously looking for vendors who share our ambitions for sustainable solutions. With this we want to ensure that all our products and raw materials used are produced in a fair, safe and high-quality manner.

The vinegar produced in the Netherlands meet these standards and is not made from petrol but is plant based and naturally fermented. Regarding EU regulations we looked for vinegar with a CAS 90132-02-8 registration. A natural vinegar that is of food grade quality.

We want only natural ingredients in our product and use ingredients that were grown and produced with the same philosophy in mind. The vinegar plays an important role in the natural preservation of the quality of Chilasso.
